Cook & Hold reduces meat shrinkage 

The Cook & Hold function is ideal for roasting over night. This way, you use the combi oven also during those hours when there is no one in the kitchen. The gentle preparation of Cook & Hold reduces shrinkage considerably and you save money every single day.

The central kitchen of Slagelse Hospital in Denmark, where food for 870 patients is prepared every day, has achieved considerable savings by using the Cook & Hold function. Susanne Christensen, Head of the daily production, says:

"We have already benefitted highly from our new HOUNÖ ovens. Shrinkage is considerably reduced. Before, I used 150 kg of beef every day, now 110 kg is enough to get the exact same amount of ready-prepared meat. I save 27% every day".
